Enjoyed at Christmas time, the Panettone’s distinctive tall, dome appearance is fondly recognised across Italy. Our panettone is made over 72 hours, the most important phase being the operation of refreshing the yeast so that it always stays alive. By working it with flour and water, we ensure that it remains reactive, giving softness and flavour to the product. The raisins are of Turkish origin for their high quality selection: the grapes are picked manually, dried naturally in the sun and chosen for colour and size. The candied lemons and oranges are always Italian and are selected through a manual process. The orange peel is chosen because it gives a lot of aroma and flavour to the product through a degree of candying that better maintains and preserves the essential oils present in the fruit. Candied citron is added to the orange and lemon, which comes from South America and, given its limited availability, gives the panettone great value.
